Baker’s Dozen with Danny P. – “Prince’s Purple Rain” Blueberry Lavender Muffin

It’s Spring time here in the city, and what a beautiful time it is! We’ve finally tucked away those fancy parkas and started to dust off our leather jackets so we can march down to the nearest patio and pretend that 8 degrees Celsius IS warm enough weather to enjoy outdoor beers. While we all have agreed that it’s still too cold to throw a BBQ, you will still see the parks flood with people stretching out their muscles stiff from hibernation. Moreover, go to any florist and you will see the store flooded with lavender, they rake the stuff in just in time to get a nice bloom for mid-June. It’s a beautiful herb; look, taste and smell. If you have never baked with it, or used it for anything for that matter, I highly suggest you do.

In 3 weeks’ time, it’s going to be far too hot for those fancy coffees that we all secretly enjoy and score us a huge amount of scene points down at the off-leash dog park. Perfectly paired with your fancy coffee should be a fancy baked treat. So, why not impress your friends with your knowledge of plant seasons and whip up a batch of these blueberry and lavender muffins for your post-brunch get together.

INGREDIENTS:

– ½ cup Cannabutter, Softened
– 1 cup White Sugar
– 1 tsp Dried Lavender Buds, Chopped
– 2 cups All Purpose Flour
– 1.5 tsp Baking Powder
– ½ tsp Salt
– 2 Eggs
– 1 tsp Vanilla
– ¾ Cup Milk
– 1 cup Blueberries
– For the Crumble Topping
– ¼ cup Brown Sugar
– ¼ cup White Sugar
– 1/3 cup Unsalted Butter, Softened
– ¾ cup All Purpose Flour
Note: Serves 12 muffins. 7.1 Mg THC per serving

BAKING INSTRUCTIONS:

Step 1: For the muffins, mix the sugar and chopped lavender together, mix this in a large sized bowl with the softened butter until well combined. Add the eggs and vanilla and gently mix.

Step 2: In a separate bowl combine the Flour, Salt and Baking soda, add this to the butter mixture until combined and no clumps are showing. Next add the milk and mix until a thick batter is formed.

Step 3: Before you add the blueberries to your batter, sprinkle them with a small amount of flour. What this will do is help stop the blueberries from sinking to the bottom of the batter while in the oven.

Step 4: For the Crumble Topping, blend all ingredients together in a bowl. For this I suggest using a spoon and try your best not to overmix. If your crumble does become over mix and forms a paste, just add a little bit of flour and while sugar.

Step 5: Line a muffin tray and distribute the batter evenly. Top with the crumble and place in the oven. Bake at 350 degrees Celsius for 40-45 minutes.
